Brocolli-Carrot Stir-Fry

1/2 cup orange juice
1 tablespoon dry sherry

1 teaspoon cornstarch

1 tablespoon cooking oil

1 teaspoon grated gingerroot

1 1/2 cups thinly bias-sliced carrots

1 cup broccoli flowerets

2 tablespoons chopped walnuts

For sauce, in a bowl stir together orange juice, dry sherry and cornstarch. Set aside.

Preheat a wok or large skillet over high heat. Add cooking oil. (add more cooking as necessary during cooking.) Stir-fry gingerroot in hot oil for 15 seconds. Add carrots and stir-fry for 1 minute. Add broccoli and stir-fry for 3 to 4 minutes or till crisp-tender. Push vegetables from the center of the wok or skillet.

Stir sauce; add to center of wok. Cook and stir till thickened and bubbly. Cook and stir for 1 minute more. Stir in vegetables and walnuts to coat. Serve immediately . Makes 4 servings.

My family wen to the province of Mindanao particularly in South Cotabato to spent the whole Lenten season with my in-laws. As usual they are participating the station of the cross activity to be led by the catholic groups (the Gagmayng Kristuhanung katilingban)GKK and the Divine Mercy Cotabato chapter. There are a lot of devoted catholics in Cotabato contrary to the images presented that Cotabato is 95 percent Muslim area. Yes there are Muslim populated areas but there are some areas that are also 95 percent Christians, mostly comprises of Ilonngo, Ilocano, and Visayan tribes. My family will be back this day from a long holiday vacation.

I parked my car near the entrance of the SM city Agro-Trade Fair entrance to buy grocery items inside the SM supermarket but there were a lot of people in uniforms and formal attire that caught my attention so what i did was I walked heading to the crowd and their I found that those people were formed to officially open the 72nd Agro-trade fair. It was headed by the big named of the local government particularly councilor Pete Lavina, Ficsmin president Vicky Jimenez, Abdul Aquino, Sally Luinberguer and other members of the FIDI and Minfed. Two days ago, I went to my province to visit my long time friend. This place is located in the mountainous region of the Central Visayas. I bought a plane ticket to Cebu and travel 86 kilometers down south and took a motor ride up in the hills of the Mantalungon area where my friend Apiong was residing. It is really a long way travel. This place was approximately 6 thousand feet above sea level. It was very cold in that area even though there was sunlight. People were wearing thick clothes in a sunny weather. When I arrived in his place. we talked a lot and shared some memories that we have on the previous years. He accompanied me to other places in their area to capture perfect views of the mountainous places. Pine trees are one of their source of income in that area because residents used to grow pine tree seedling and sell it to the local tourist as well as the gardeners down south while others were growing vegetables. I myself had bought some of the seedlings. It was really fun strolling in the mountainous region of that area because I am a nature lover by heart.
